French cheese made from unpasteurized cow's milk in the Eastern France (Franche Comte Region) produced since the time of Charlemagne. This cheese is still traditionally made in more than 190 cheese diaries, known as the "fruitieres" in the Jura plateau. Comte has a complex, nutty and caramelized flavor.
